Recipe vegan no bake cake

The oven stays off in these temperatures. Still fancy a cake? No problem, the effort you put into this vegan no-bake orange cake will pay off the moment you take your first bite. Wonderfully fresh, fruity and simply perfect for a hot summer weekend! 😍

You need for the base

– 300g vegan orange and chocolate cookies
– 100g vegan margarine, melted
– 1 tsp orange zest, finely grated

For the orange cream

– 400ml coconut milk (from the tin, chilled)
– 200g vegan whipped cream
– 100g icing sugar
– 1 tsp vanilla extract
– 1 tsp orange zest, finely grated
– 100ml (freshly squeezed) orange juice
– 2 tbsp cornflour

For the topping

– 100g vegan chocolate, chopped
– orange zest and fresh orange slices (optional)

Prepare the base

Process the orange chocolate cookies into fine crumbs. Add the melted margarine and orange zest and mix well. Press the mixture into a greased springform tin and place the base in the fridge for about 30 minutes.

Prepare the orange cream

Separate the solid part of the chilled coconut milk (coconut cream) from the liquid and pour into a bowl. Whip the vegan whipping cream until stiff and set aside. Add the icing sugar, vanilla and orange zest to the coconut cream and mix well. Heat the orange juice and cornflour over a medium heat until the mixture thickens (approx. 1-2 minutes). Stir the cooled orange juice into the coconut cream mixture and carefully fold in the stiffly whipped cream.

Assemble the cake

Pour the orange cream onto the cooled cookie base and smooth it out. Spread the chopped vegan chocolate evenly over the surface. Leave the cake to set in the fridge for at least 4 hours, but preferably overnight. Then decorate the cake with orange zest and fresh orange slices and enjoy! Bon appétit 😊
