Vegan recipe for savoury patties

There are many good reasons to celebrate this year. We are celebrating 160 years of baking and the Demeter organic farming association is celebrating 100 years of biodynamic agriculture. A great occasion for a summer party! Together with the creative people behind Krautkopf and our herb & garlic bread chips, we have developed a great recipe for your next summer party.

For 16 patties (4 people) you need

– 500 g potatoes, peeled
– 200 g cauliflower
– 1 shallot
– frying oil
– 150 g bread chips herbs & garlic
– 3 tsp mustard
– salt
– 80 g vegan mayonnaise
– 80 g vegan yoghurt
– 1/2 cucumber
– 8-10 radishes
– flour for breading
– plant milk for breading
– 16 lettuce leaves
– 3-4 stalks of dill

Preparation

Cut the potatoes into large pieces and cook in salted water until done. Separate the cauliflower into florets and also cook in salted water. Finely chop the shallot. Heat some frying oil in a small pan and sweat the shallot until translucent. Crush the bread chips into fine crumbs in a mortar or chop in a blender. Chop the cooked cauliflower and mash the potatoes in a pan. Add the cauliflower, shallot, 50 g of the crushed bread chips and 2 teaspoons of mustard to the potatoes, mix everything together and season the mixture well with salt. For the sauce, mix the mayonnaise with the soya yoghurt and the remaining teaspoon of mustard and season with salt. Quarter the cucumber lengthways, remove the core and cut into small cubes. Finely slice the radishes. Prepare three shallow plates for breading the patties. Put some flour on the first plate, vegetable milk on the second and the remaining breadcrumbs on the last. With wet hands, shape the potato mixture into 16 small patties, first roll them in flour, then dip them in the plant milk and finally coat them in the breadcrumbs. Heat plenty of frying oil in a pan and fry the patties for 3-4 minutes on each side over a medium heat until golden brown. Then drain on kitchen paper. Arrange the cauliflower and potato patties on the lettuce leaves together with the radishes and cucumber, spread the sauce on top and garnish with the dill sprigs.
