Mmmh Bruschetta, delicious! The perfect snack for a warm summer evening and a vacation feeling like in Italy. The base for this simple and vegan bruschetta recipe is our whole wheat rusk, which is anything but boring. All you need are just a few ingredients, some patience and a lot of hunger ūüôĆ


‚ěĚ one package wholemeal rusk
‚ěĚ 200 g cherry tomatoes
‚ěĚ 1 small onion
‚ěĚ if you like, take 1-2 more cloves of garlic
‚ěĚ vegan mozzarella cheese
‚ěĚ salt, pepper & olive oil
‚ěĚ fresh basil


Cut tomatoes and onion into small cubes, mozzarella into thin slices. In a bowl, mix well tomatoes, onion, a little olive oil with salt and pepper. Put about 1 tablespoon of each on a slice of rusk and garnish with a slice of mozzarella. Drizzle with olive oil, sprinkle with some basil and place in oven preheated to 180 degrees for about 15-20 minutes. Let cool briefly and enjoy.
