We love desserts! Especially when our crunchy cantuccini play a leading role. On the occasion of the day of the dessert we have a simple and yet fantastically delicious recipe for vegan no bake peanut butter squares for you.
For the base:
285 g Cantuccini
30 g neutral vegetable oil
70 g peanut butter, natural & crunchy
For the chocolate topping:
230 g dark chocolate
160 g peanut butter, natural & crunchy
40 g neutral vegetable oil
For the base, put the cantuccini in a blender and grind into fine crumbs. Then mix vegetable oil and peanut butter well in a bowl until both have become a uniform, smooth mass. Now add the ground cantuccini and mix well. Then pour the crumb mixture into a baking dish lined with baking paper and press it into the bottom of the dish with your fingers. Cover well and place in the freezer for 20 minutes.
For the topping, mix vegetable oil and peanut butter well in a bowl until both have become a uniform, smooth mass. Break chocolate into pieces and heat together with peanut butter and oil mixture for about 1 minute. Mix everything well and when it is liquid, pour it on the cake base. Cover and refrigerate for about 45 minutes. After that, the squares are ready, just cut them into pieces and enjoy – bon appétit!
Tip: Serve with apples, as the rich slices harmonize well with the acidity of the apples.
